Russian Teacakes

Another recipe from Mary Jane.  Again a very simple recipe that only works when you use the right technique.  The cold butter should be cut into small cubes before being mixed with the flour and sugar.  Do not over-mix.  The dough starts as a dry, loose mixture, but changes to one that will pack when compressed in your hand but fall apart easily when pinched.  From that stage it will very quickly go a dense, tough dough, so stop before then.  The cookies should be made during the middle stage.


1 cup Butter (2 sticks), cold

½ cup Powdered Sugar

2-1/4 cups Sifted Flour

1/4 tsp. Salt

3/4 cup Chopped Walnuts


Mix all ingredients with large fork or pie-crust mixer, adding nuts last. Form into one-inch balls. Set one inch apart on cookie sheet. Bake for 12 minutes, 375 degrees. While hot, drop cookies in small bag of sifted powder sugar, then cool on paper towels.
