Good peanut flavor and the chocolate kiss tastes good too.
1 cup solid vegetable shortening
1 cup peanut butter
1 cup granulated sugar
1 cup packed brown sugar
2 teaspoons vanilla
2-2/3 cups all purpose flour
2 teaspoons baking soda
1 teaspoon salt
1/4 cup additional granulated sugar
5-6 dozen chocolate candy kisses
Sift together the flour, baking soda and salt. Set aside. Unwrap the chocolate kisses. Set aside.
In the large bowl of an electric mixer, beat shortening, peanut butter, granulated sugar and brown sugar until creamy. Beat in eggs and vanilla. Gradually add the flour mixture, blending thoroughly.
Place 1/4 cup granulated sugar in a small bowl. Roll the dough into 1-inch balls, then roll in the sugar to coat. Place the balls 2-inches apart on a greased baking sheet.
Bake in a 350 degree oven for ten minutes. Remove cookies from oven and quickly top each with a chocolate kiss, pressing down until the cookie cracks around the edges. Return to the oven and bake an additional 3-5 minutes or until the cookies are lightly browned and firm to the touch. Transfer to racks and let cool completely.
Makes 5 to 6 dozen.
