I like these a lot but you have to like peppermint to like them too.
1 cup butter or margarine
1 cup granulated sugar
1 cup firmly packed brown sugar
2 teaspoons Vanilla
2-1/2 cups all-purpose flour
1 teaspoon baking soda
½ teaspoon salt
4 ounces baking chocolate, melted and cooled
1 cup crushed hard peppermint candy
Preheat oven to 350 degrees.
In a large bowl of an electric mixer beat butter, granulated sugar and brown sugar until creamy; then beat in eggs and vanilla. In another bowl, stir together flour, baking soda and salt; gradually add in the butter mixture, blending thoroughly. Stir in melted chocolate and peppermint.
Drop dough by rounded teaspoonfuls onto ungreased baking sheets. Bake for 12 to 15 minutes. Transfer to racks and let cool.
Chocolate Chocolate Chip version:
Basic recipe as above, but add 1-1/2 cups chocolate chips instead of peppermint candy.
