Of all the cookies I have made, this was Mary Jane’s favorite.
2 cups all purpose flour
1/2 cup oat flour
1 teaspoon baking powder
1 teaspoon baking soda
1/2 teaspoon salt
1 stick (4 ounces) butter, softened
1/2 cup shortening
1 cup granulated sugar
1 cup firmly packed dark brown sugar
1 teaspoon vanilla extract
12 ounces semisweet chocolate chips (2 cups)
4 ounces semisweet chocolate (4 1-ounce bars) grated
Preheat oven to 350 degrees. In a small bowl stir together flour, oat flour, baking powder, baking soda and salt.
In a large bowl, beat butter, shortening, granulated sugar, and dark brown sugar with an electric mixer on medium speed until creamy. Beat in eggs and vanilla until well blended.
Add flour mixture and beat until well blended. Mix in chocolate chips and grated chocolate.
Place golf-ball sized balls 2-1/2 inches apart on ungreased cookie sheets. Bake 11 to 13 minutes or until lightly browned. Let stand 2 minutes on cookie sheets, then remove to a rack and let cool completely.
To make 1/2 cup oat flour, finely grind 1 cup oatmeal in a food processor or blender (although we always measure afterwards and there’s more than 1/2 cup).
